Canadian Flag Squares - Patriotic red and white layered squares that will make you burst into 'O Canada' all day long.
Ingredients:
  • 1 cup all-purpose flour
  • 2 tablespoons confectioners' sugar
  • 0.5 cup butter
  • 0.33333334326744 cup seedless raspberry jam
  • 0.66666668653488 cup white sugar
  • 0.5 cup butter, softened
  • 0.66666668653488 cup rice flour
  • 10 drops red food coloring, or as needed
  • 2 cups confectioners' sugar, or as needed
  • 0.33333334326744 cup butter, softened
  • 1 tablespoon milk, or as needed
  • 1 teaspoon maple extract
Instructions:
  • Preheat your oven to 300 degrees F (150 degrees C), then line an 8-inch square baking pan with parchment paper, making sure to crease the corners well.
  • Combine 1 cup flour and 2 tablespoons confectioners' sugar, then blend in 1/2 cup butter until the mixture looks like fine crumbs. Press the mixture evenly into the pan.
  • After baking in the preheated oven for 20 minutes, allow to cool on a wire rack for approximately 15 minutes. Evenly spread raspberry jam over the base.
  • Preheat oven to 375°F (190°C) for the perfect bake.
  • Cream together the white sugar and 1/2 cup of butter until light and fluffy. Add eggs and continue to beat until pale yellow and fluffy. Gently mix in rice flour until fully combined, then stir in food coloring to achieve the desired red hue. Evenly spread the batter over the jam layer.
  • Bake in the oven until a toothpick inserted in the center comes out clean, approximately 30 minutes. Let it cool completely in the pan for about 20 minutes.
  • Using an electric mixer, combine 2 cups confectioners' sugar and 1/3 cup butter until smooth. Stir in milk and maple extract, then spread this delicious icing evenly over the cooled bars.
  • Hold onto the edges of the parchment paper and transfer the squares onto a cutting board. Use a very sharp knife to slice them into 1-inch squares.
