Indulge in mouthwatering walnut and date muffins for a delectable treat.
Ingredients:
  • 3/4 cup buttermilk
  • 1/4 cup vegetable oil
  • 1/4 cup mild-flavor (light) molasses
  • 1 egg
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 1/2 cup packed brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon grated orange peel
  • 1/2 teaspoon salt
  • 3/4 cup chopped glazed walnuts
  • 3/4 cup chopped pitted dates
Instructions:
  • Preheat your oven to 350°F. Line a standard muffin tin with 12 paper baking cups and spray them with cooking spray.
  • In a big bowl, whisk together buttermilk, oil, molasses, and egg until thoroughly combined. Add flour, brown sugar, baking soda, orange peel, and salt, mixing until just combined (don't overmix - it's okay if it's lumpy). Fold in walnuts and dates. Fill muffin cups evenly with batter.
  • Bake for 25-30 minutes, or until golden brown and a toothpick inserted in the center comes out clean. Remove from the pan and let cool on a rack. Serve warm or at room temperature.
