Refreshing cannellini bean and shrimp salad with zesty herb dressing. Best when chilled for several hours or overnight.
Ingredients:
  • 0.25 cup red wine vinegar
  • 0.25 cup olive oil
  • 1 teaspoon sugar
  • 0.25 teaspoon dried cilantro
  • 0.25 teaspoon dried basil
  • 0.25 teaspoon dried tarragon
  • 1 (15 ounce) can white kidney beans, drained and rinsed
  • 1 roma (plum) tomato, diced
  • 0.25 red onion, diced
  • 0.75 pound cooked tiny shrimp
Instructions:
  • Combine vinegar, oil, sugar, cilantro, basil, and tarragon in a small bowl, whisking until thoroughly mixed. Feel free to adjust seasonings to your taste.
  • Combine beans, tomato, onion, and shrimp in a bowl. Drizzle dressing over the salad and toss to coat evenly.
  • Refrigerate for several hours or overnight to enhance flavors.
