Capellini tossed with succulent shrimp in a luxurious lemon cream sauce, finished with fresh herbs and Parmesan.
Ingredients:
  • 3/4 cup heavy whipping cream
  • 1/4 cup chicken stock
  • 3 tablespoons lemon juice
  • 3/4 pound angel hair pasta (also called capellini )
  • Salt and black pepper
  • 1 pound raw medium shrimp, peeled and deveined *
  • 1/2 cup (loosely packed) chopped parsley
  • 1/4 cup (loosely packed) chopped chives
  • 1 lemon, zested
  • 1/2 cup freshly grated Parmesan cheese
Instructions:
  • Boil pasta water: In a large pot, bring water to a boil and add 1 tablespoon of salt for every 2 quarts of water.
  • In a small pot, gently simmer the cream, chicken stock, and lemon juice for 3 to 4 minutes until heated through.
  • Drop the angel hair pasta into the bubbling water.
  • Introduce the shrimp to the gently bubbling lemon cream sauce, seasoning with a pinch of salt and black pepper. Allow the shrimp to cook for 3 to 4 minutes, matching the timing of the angel hair pasta. Vibrantly sprinkle in the parsley and chives halfway through cooking.
  • After cooking the pasta, drain it and transfer it to a large bowl. Mix in the shrimp, lemon cream sauce, lemon zest, and a majority of the Parmesan cheese. Portion out the dish and sprinkle the remaining Parmesan on top. Adjust the consistency with a splash of water or cream if needed, knowing the pasta will absorb the flavors perfectly.
