Quick and Easy Shrimp with Angel Hair Pasta

30-minute ginger garlic shrimp pasta with colorful bell peppers.
Ingredients:
  • 1/2 cup extra virgin olive olive
  • 2 cups finely diced red and green bell peppers (3 to 4 bell peppers)
  • 2 Tbsp grated fresh ginger root
  • 2 cloves garlic, minced (about 2 teaspoons)
  • Salt
  • 1 pound peeled and deveined medium sized shrimp (31-40 count)
  • 4 Tbsp fresh lime juice (can sub lemon juice)
  • 1/2 teaspoon black pepper
  • 3 Tbsp chopped chives (or green onion greens)
  • 3/4 pound angel hair pasta
Instructions:
  • Bring 4 quarts of salted water to a boil in a large pot. Proceed with the recipe while the water heats up.
  • In a large sauté pan over medium-high heat, sauté diced bell peppers in 3 tablespoons of olive oil until softened, about 4 to 5 minutes. Add grated ginger and minced garlic, and cook for an additional 1 to 2 minutes.
  • Incorporate shrimp into the dish and cook until tender and opaque, around 2 to 3 minutes. Finish with a squeeze of fresh lime juice, a drizzle of remaining olive oil, and a hint of black pepper. Take off the heat.
  • Add angel hair pasta to boiling water and cook for 2 minutes until al dente. Reserve 1/2 cup of pasta water before draining.
  • Combine pasta with shrimp: Return drained pasta to the pan with the shrimp. Pour in the reserved pasta cooking water and mix well. Serve sprinkled with chopped chives.
