Delicious shrimp, basil, and garlic pasta topped with Parmesan cheese.
Ingredients:
  • 0.25 cup olive oil, divided
  • 1 (8 ounce) package angel hair pasta
  • 1 teaspoon chopped garlic
  • 1 pound large shrimp - peeled and deveined
  • 2 (28 ounce) cans Italian-style diced tomatoes, drained
  • 0.5 cup dry white wine
  • 0.25 cup chopped parsley
  • 3 tablespoons chopped fresh basil
  • 3 tablespoons freshly grated Parmesan cheese
Instructions:
  • In a large pot, bring water with a splash of olive oil to a boil. Cook pasta until al dente. Drain and rinse.
  • In a 10-inch skillet over medium heat, warm the rest of the olive oil. Sauté garlic, stirring constantly, until tender, for about 1 minute. Introduce shrimp and sauté for 3 to 5 minutes. Set aside the cooked shrimp.
  • Combine tomatoes, wine, parsley, and basil in the pot. Cook until the liquid reduces by half, for 8 to 12 minutes. Add shrimp and cook until heated through, for about 2 to 3 minutes.
  • Plate the shrimp mixture on top of the pasta and generously sprinkle with Parmesan cheese for a delectable finishing touch.
