Spicy Buffalo chicken strips with buttery cereal coating, fried to perfection.
Ingredients:
  • 2 cups brown sugar and butter flavored crispy corn and oat breakfast cereal (such as Cap’n Crunch®)
  • 0.25 cup flour
  • 0.5 teaspoon salt, or to taste
  • 0.5 teaspoon ground black pepper
  • 2 eggs, lightly beaten
  • 2 tablespoons buffalo wing sauce
  • 1 pound chicken tenders
  • 0.25 cup olive oil
Instructions:
  • Process cereal in a food processor until finely crushed, then transfer to a shallow bowl.
  • Combine flour, salt, and black pepper in one shallow bowl, and mix eggs with Buffalo wing sauce in another shallow bowl.
  • Coat chicken tenders in flour, dip in beaten egg, then press into crushed cereal. Gently shake off any excess crumbs and arrange in a single layer on a plate without stacking. Repeat for remaining chicken tenders. Enjoy!
  • In a skillet over medium heat, sear the chicken tenders in batches in hot olive oil until they are cooked through and golden brown on both sides, about 3 to 4 minutes per side. Place the cooked chicken on a paper towel-lined plate.
