Cape Cod-inspired cocktail meatballs cooked in a flavorful cranberry sauce glaze.
Ingredients:
  • 2 pounds ground beef
  • 1 cup bread crumbs
  • 0.25 cup chopped fresh parsley
  • 2 eggs
  • 2 tablespoons grated onion
  • 2 tablespoons soy sauce
  • 0.25 teaspoon garlic powder
  • 1 (16 ounce) can jellied cranberry sauce (such as Ocean Spray®)
  • 1.5 cups ketchup
  • 2.5 tablespoons packed brown sugar
  • 1 tablespoon lemon juice
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C).
  • Combine ground beef, bread crumbs, parsley, eggs, grated onion, soy sauce, and garlic powder in a bowl until well mixed. Roll 2-teaspoon portions of the mixture into small meatballs and place them in a large baking dish.
  • Place the meatballs in the preheated oven and bake until golden brown for about 25 minutes. Remove and drain any excess grease.
  • In a saucepan over medium heat, mix jellied cranberry sauce, ketchup, brown sugar, and lemon juice until the cranberry sauce melts and the brown sugar dissolves. Stir occasionally.
  • Drizzle the sauce over the meatballs and bake until they are glazed and cooked through, for 25 to 30 minutes.
