Create a New England-style one-pot clambake at home, no Cape Cod required.
Ingredients:
  • 4 pounds total steamer clams and mussels (you can use all clams if you prefer)
  • 2 tablespoons olive oil
  • 4 linguica, chorizo, or other fresh sausages of your choice
  • 4 hot dogs (optional, but so good)
  • 1 cup white wine
  • 2 cups water
  • 1 teaspoon salt
  • 2 pounds small red potatoes
  • 6 shallots, peeled
  • Small handful of fresh thyme sprigs
  • 2 bay leaves
  • 4 ears corn on the cob, husked
  • 4 ounces (1 stick) butter, melted, for dipping
Instructions:
  • Clean the clams and mussels: Rinse the clams under cold running water, scrubbing off any sand. Remove any beards from the mussels if present. Discard any clams or mussels with cracked shells or those that don't close when lightly tapped.
  • Caramelize the sausages: Heat oil in a large pot over medium heat. Pierce sausages with a knife tip and place in the pot. Sear for 5 minutes, turning occasionally until golden. Transfer to a plate.
  • Combine the wine and water in a pot over high heat. Bring to a boil, then adjust to a simmer. Stir in the salt.
  • Combine the potatoes, shallots, thyme, and bay leaves in a pot. Cover and cook for 6 minutes.
  • Layer the sausages, hot dogs, clams, mussels, and corn in the pot. Cover and cook for 10 to 14 minutes until the clams and mussels open.
  • To plate the clambake: Use a large slotted spoon to move the corn, mussels, clams, sausages, and potatoes onto a large serving platter. Disregard any unopened clams or mussels. Serve the broth in cups for dipping, ensuring no sand makes its way into the cups. Place melted butter in 4 small ramekins for guests to enjoy with the meal.
