Caramel, banana and pecan self-saucing pudding

Indulge in a warm and comforting self-saucing pudding - the perfect winter dessert.
Ingredients:
  • Melted butter, to grease
  • 150g (1 cup) self-raising flour
  • 100g (1/2 cup, firmly packed) brown sugar
  • 60g pecans, coarsely chopped
  • 175g (2/3 cup) mashed overripe banana
  • 80ml (1/3 cup) milk
  • 1 egg
  • 40g butter, melted, cooled
  • 10.00 gm cornflour
  • 80g (1/2 cup, lightly packed) brown sugar, extra
  • 375ml (1 1/2 cups) boiling water
  • 26.80 gm golden syrup
  • Vanilla ice-cream, to serve
Instructions:
  • - Preheat your oven to 180°C. - Grease a 1.5L (6-cup) ovenproof dish with melted butter and place it on a baking tray lined with non-stick baking paper. - In a large bowl, sift the flour and then stir in the sugar and pecans.
  • Combine whisked banana, milk, egg, and butter with the flour mixture until smooth. Transfer the batter to the prepared dish and use the back of a spoon to evenly smooth the surface.
  • Mix cornflour and additional sugar in a small bowl, then sprinkle evenly over the pudding mixture. In a large jug, combine boiling water and golden syrup. Slowly pour this mixture over the sugar mixture using the back of a spoon.
  • Bake for 45-50 minutes or until a golden cake-like top is achieved and a skewer inserted halfway into the center comes out clean.
  • Let it rest for 5 minutes before serving with a scoop of ice cream.
