Fall-flavored apple upside down cake with cinnamon-infused caramel apples for a delightful dessert.
Ingredients:
  • nonstick cooking spray
  • 6 tablespoons unsalted butter
  • 0.5 cup brown sugar
  • 2 medium apples, cored and thinly sliced
  • 1.5 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1.5 teaspoons baking powder
  • 0.5 cup unsalted butter, at room temperature
  • 0.5 cup white sugar
  • 0.5 cup packed brown sugar
  • 2 large eggs, at room temperature
  • 1.5 teaspoons pure vanilla extract
Instructions:
  • Coat an 8- or 9-inch round cake pan with nonstick spray.
  • In a small saucepan over medium heat, melt butter with brown sugar until mixture gently simmers for 3 to 4 minutes. Be careful not to let it boil; just let it bubble gently to thicken slightly.
  • Pour the mixture into the greased cake pan and artistically place apple slices around it. Chill in the refrigerator to set the topping as you make the cake.
  • Preheat the oven to a toasty 350°F (175°C).
  • Combine flour, cinnamon, baking powder, and salt in a bowl and whisk until well mixed.
  • Using an electric mixer, cream together butter, sugar, and brown sugar in a separate bowl until light and fluffy, approximately 2 to 3 minutes, ensuring to scrape down the bottom and sides. Gradually add eggs, scraping down the sides, then mix in vanilla. On low speed, gently incorporate dry ingredients until just combined; the batter will be thick.
  • Take the cake pan out of the refrigerator and carefully spread the thick batter over the topping, being mindful not to disrupt the apples.
  • Bake in the oven until a toothpick inserted in the center comes out clean, approximately 40-45 minutes. Cool on a rack for 15 minutes before serving.
  • Cover the pan with a plate, then confidently flip it over to release the cake onto the plate. Allow the cake to cool completely at room temperature for 45 minutes to an hour; its soft top will set nicely for a clean cut once cooled.
