Impressive holiday caramel cake with moist layers and rich homemade caramel icing.
Ingredients:
  • 3 cups white sugar
  • 1.5 cups butter
  • 5 large eggs
  • 3.5 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 1.25 cups whole milk
  • 1 teaspoon vanilla extract
  • 1 (16 ounce) package brown sugar
  • 1 cup butter
  • 0.66666668653488 cup evaporated milk
  • 1 (16 ounce) package confectioners' sugar, sifted
  • 2 teaspoons pure vanilla extract
Instructions:
  • Collect all the ingredients. Preheat the oven to 350°F (175°C). Grease and flour three 9-inch cake pans.
  • In a mixing bowl, combine white sugar and butter. Beat with an electric mixer on medium speed until light and fluffy. Gradually add eggs, one at a time, mixing well after each addition.
  • In a separate bowl, mix flour, baking powder, and salt. Gradually add the flour mixture and milk to the batter, alternating between the two, and lightly beat after each addition. Stir in vanilla extract and beat until the batter ribbons off the beaters.
  • Evenly distribute the batter into the greased cake pans.
  • Bake in the preheated oven for 30 minutes or until a toothpick inserted in the center comes out clean. Allow to cool on a wire rack for 5 minutes, then carefully loosen the edges with a table knife and invert onto a cooling rack. Let cool for about 30 minutes before serving.
  • Prepare a luscious icing by melting brown sugar, butter, and salt in a saucepan over medium heat, stirring until the brown sugar is fully dissolved, approximately 3 minutes.
  • Stir in evaporated milk and bring to a gentle boil, stirring constantly to prevent sticking. Let it bubble for approximately 4 minutes. Remove from heat and cool for about 5 minutes.
  • Combine confectioners' sugar and vanilla extract with brown sugar mixture in an electric mixer until the icing caramelizes and reaches your preferred thickness.
  • Frost the cooled cake layers with icing, then stack them together and frost the top and sides.
