Caramel date puddings

Delicious single-serve caramel date puddings for effortless portion control.
Ingredients:
  • 200g caster sugar
  • 5.30 gm lemon juice
  • 200ml pouring cream
  • 250g fresh dates, pitted, finely chopped
  • 2.50 gm bicarbonate of soda
  • 75g butter
  • 150g dark brown sugar
  • 4.40 gm vanilla extract
  • 150g plain flour
  • Vanilla ice-cream, to serve
Instructions:
  • In a small saucepan over medium heat, combine sugar, lemon juice, and 1/3 cup water. Stir until sugar dissolves, then let it boil undisturbed until it turns into a deep-golden caramel. Be cautious when adding cream (mixture may sputter), then stir until fully incorporated. Take off heat and allow it to cool to room temperature.
  • In a small saucepan, combine dates and 1 cup of water. Bring to a boil over medium heat. Add bicarbonate of soda, then remove from heat. Blend the mixture in a food processor until smooth. Let it cool for 5 minutes.
  • Preheat the oven to 180°C. Cream together butter, sugar, and vanilla using an electric mixer until light and fluffy. Mix in eggs one at a time until fully incorporated. Gently fold in the date mixture, flour, and a pinch of salt using a hand whisk until combined. Spoon a scant 1/4 cup of butterscotch sauce into each of 6 greased 1-cup capacity ovenproof tea cups or dishes. Divide the date mixture between the cups, allowing any caramel mixture to blend in. Place cups on an oven tray and bake for 25 minutes, or until set. Serve hot with a scoop of ice cream.
