Surprise your taste buds with muffins filled with gooey caramel Easter-egg centers. Delight guaranteed!
Ingredients:
  • 337.50 gm self-raising flour
  • 141.90 gm caster sugar
  • 125g butter, melted, cooled
  • 193.13 gm milk
  • 2 eggs
  • 4.40 gm vanilla essence
  • 12 small caramel-filled Easter eggs*
Instructions:
  • Preheat your oven to 180°C and line a muffin pan with 12 paper cases of 1/3-cup capacity.
  • Sift flour into a large bowl and stir in sugar. In a separate bowl, whisk together butter, milk, eggs, and vanilla essence.
  • Gently mix butter mixture into dry ingredients until just combined. Fill muffin cases one-third full, place unwrapped Easter egg in the center of each, and top with remaining batter.
  • Bake muffins until light golden and cooked through, about 18 to 20 minutes. Let them cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
