Caramel fruit and nut slice

Chill and enjoy this delightful dried fruit and nut slice with your afternoon tea!
Ingredients:
  • Melted butter, to grease
  • 300g (2 cups) plain flour
  • 115g (1/2 cup) caster sugar
  • 180g butter, melted
  • 1 x 395g can sweetened condensed milk (Nestle brand)
  • 20g butter
  • 27.00 gm maple syrup
  • 55g (1/3 cup) chopped dried whole apricots
  • 175g (1 cup) dried fruit and nut mix, chopped
Instructions:
  • Preheat your oven to 180°C. Grease a square 23cm slab pan with melted butter and line the base and 2 sides with non-stick baking paper, leaving some to hang over the edges.
  • In a bowl, mix flour and sugar, then add butter and combine until smooth. Press the mixture onto the prepared pan, and bake for 15 minutes or until golden. Set aside after removing from the oven.
  • For the topping, combine condensed milk, butter, and maple syrup in a heavy-based saucepan over medium heat. Stir constantly for 15 minutes until the mixture thickens and caramelizes. Pour over the slice base, then sprinkle with chopped apricots, dried fruit, and nuts. Press down gently with a spoon. Let it cool for 30 minutes, then chill in the fridge for 1 hour until set. Cut into squares and serve.
