Caramel Apple Baked Brie

Impress guests with this simple yet stunning fruit and nut cheese stack.
Ingredients:
  • 1 tablespoon butter
  • 1/2 cup chopped peeled firm apple (Braeburn, Gala or Granny Smith)
  • 1/4 cup sweetened dried cranberries
  • 1/4 cup packed brown sugar
  • 2 tablespoons chopped shelled pistachios or pecans
  • 2 tablespoons brandy or apple juice
  • 1 round (8 oz) Brie cheese
  • Baguette French bread slices, assorted crackers or fresh apple slices
Instructions:
  • Preheat the oven to 350°F. Melt butter in an 8-inch skillet over low heat. Add apple, cranberries, brown sugar, pistachios, and brandy. Cook for 3 minutes until apples are just tender, stirring often.
  • Split the Brie round horizonally, place the bottom half in a 9-inch pie pan. Spoon half of the fruit mixture over the cheese, and layer the top half of the cheese over the fruit. Finish by topping with the remaining fruit mixture and securing with 3 toothpicks.
  • Bake until cheese is soft, then transfer the Brie onto a platter using a broad spatula. Drizzle any syrup and fruit from the pan over the top. Serve warm with slices of baguette bread.
