Try this refreshing and simple summer fruit slice.
Ingredients:
  • 70g (1/3 cup) brown sugar
  • 50g butter
  • 60ml (1/4 cup) fresh lime juice
  • 8 x 1cm-thick slices fresh pineapple flesh
  • Gluten-free vanilla ice-cream, to serve
  • 7.80 gm shredded coconut
  • Finely grated lime rind, to sprinkle
Instructions:
  • Combine sugar, butter, and lime juice in a large frying pan over low heat, stirring until well mixed. Simmer for 3 minutes, stirring occasionally, until slightly reduced.
  • Turn up the heat to medium-high and add in half of the juicy pineapple slices. Let them sizzle for 3 minutes on each side until caramelized. Plate them up beautifully and continue with the rest of the pineapple slices.
  • Place a scoop of ice-cream on the pineapple. Pour the warm sauce from the pan on top and sprinkle with coconut and lime zest. Serve right away to enjoy the delicious flavors.
