Indulge in decadent chocolate cake with irresistible salted caramel and ganache.
Ingredients:
  • 2 x 583g pkts Super Moist Chocolate Fudge Cake Mix
  • Sea salt flakes, to sprinkle
  • Grated dark chocolate, to decorate
  • 315g (1 1/2 cups) caster sugar
  • 60ml (1/4 cup) water
  • 80ml (1/3 cup) pouring cream
  • 60ml (1/4 cup) golden syrup
  • 125g butter, chopped
  • 1.20 gm sea salt flakes
  • 750g Dessert 70% Cocoa Specialty Cooking Chocolate, finely chopped
  • 500ml (2 cups) pouring cream
  • 4.40 gm vanilla extract
Instructions:
  • 1. Preheat your oven to 180°C. 2. Bake cakes in two 22cm cake pans as instructed on the packet. 3. Allow the cakes to cool completely before proceeding.
  • For the salted caramel, combine sugar and water in a saucepan over low heat until the sugar dissolves. Brush the sides of the pan with a wet pastry brush. Boil until the syrup turns golden. Remove from heat and stir in cream, golden syrup, butter, and sea salt until smooth. Allow it to cool completely.
  • For the ganache, start by placing the chocolate in a heatproof bowl. Then, bring the cream to a gentle boil in a saucepan. Pour the hot cream over the chocolate and let it sit for a minute. Stir until the chocolate is fully melted and the mixture is smooth. Add in the vanilla, mix well, and let it sit until thick and spreadable.
  • Trim the tops off the cakes, then slice each one in half horizontally. Begin by placing one cake base on a plate and drizzling with ¼ of the caramel. Add teaspoonfuls of ¼ of the ganache, spread evenly, and sprinkle with a bit of salt. Repeat this process with the remaining cake, caramel, ganache, and salt, ending with the final layer of ganache and salt. Finish off by topping with grated chocolate.
