Indulge in caramel-drizzled cheesecake bites - the ultimate crowd-pleasing dessert!
Ingredients:
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/4 cup butter or margarine, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 2/3 cup granulated sugar
  • 1 teaspoon vanilla
  • 1/4 cup whipping (heavy) cream
  • 3 eggs
  • 1/2 cup pecan halves, coarsely chopped
  • 1 tablespoon butter or margarine, softened
  • 1 tablespoon packed brown sugar
  • 1/3 cup caramel topping
Instructions:
  • Preheat the oven to 325°F. Prepare the Graham Cracker Crust by lining a 15 1/2 x 10 1/2-inch rectangular pan with aluminum foil. Combine all ingredients and press the mixture into the bottom of the pan using a fork. Bake for 8 to 10 minutes, then allow to cool before using.
  • In a large bowl, use an electric mixer on medium speed to beat cream cheese until smooth. Gradually add granulated sugar and vanilla, continue beating until smooth. Mix in whipping cream, then add eggs one at a time. Pour mixture over crust. Combine pecans, butter, brown sugar, and caramel topping, then evenly distribute over the cheesecake.
  • Bake for 30-35 minutes until lightly golden around edges. Allow to cool for 30 minutes. Refrigerate covered for at least 2 hours, but no more than 48 hours. Use a 1 1/4-inch round cookie cutter to cut out individual cheesecake portions and place them on a serving plate. For extra flavor, drizzle with more caramel topping, if desired.
