Indulgent caramel pecan cheesecake with a nutty crust, creamy cinnamon filling, and topped with crunchy pecans and caramel - a festive holiday treat!
Ingredients:
  • 1 cup graham cracker crumbs
  • 0.5 cup ground pecans
  • 3 tablespoons white sugar
  • 0.5 teaspoon apple pie spice
  • 0.5 teaspoon ground nutmeg
  • 0.25 cup margarine, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 0.25 cup caramel ice cream topping
  • 1 cup chopped pecans
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C). In a medium bowl, combine graham cracker crumbs, ground pecans, sugar, cinnamon, apple pie spice, and nutmeg. Stir in melted butter until well mixed, then press this delicious crust into the bottom of a 9-inch springform pan.
  • In a large bowl, combine cream cheese, 1/2 cup sugar, and vanilla, beating until smooth. Add eggs one at a time, mixing until blended. Pour the filling over the prepared crust.
  • Bake in the preheated oven for about 70 minutes, until the edges are puffed and the surface of the cheesecake is firm with a slight jiggle in the center. Let the cheesecake cool before serving.
  • Mix together the caramel topping and chopped pecans in a small bowl, then evenly spread the mixture over the cooled cheesecake. Chill in the refrigerator for a minimum of 4 hours before serving.
