Caramel Pecan Tarts

Indulge in these bite-sized nutty caramel pecan pie treats.
Ingredients:
  • 1 cup Gold Medal™ all-purpose flour
  • 1/2 cup butter or margarine, softened
  • 1/4 cup powdered sugar
  • 3/4 cup packed brown sugar
  • 1/2 cup chopped pecans
  • 1 tablespoon butter or margarine, softened
  • 1 teaspoon vanilla
  • 1 egg, slightly beaten
  • 12 vanilla caramels, unwrapped
  • 1 tablespoon milk
Instructions:
  • Preheat the oven to 350°F. Combine flour, 1/2 cup of butter, and powdered sugar in a medium bowl. Divide the dough into 24 equal pieces. Press each piece into the bottom and up the sides of small ungreased or lined 1 3/4x1 inch muffin cups.
  • Combine the remaining ingredients for the Tart in a medium bowl. Fill each cup with slightly less than 1 tablespoon of the mixture.
  • Bake for around 20 minutes, or until the filling is firm and the crust is golden. Allow to cool slightly, then gently loosen from the cups using a knife. Transfer to a wire rack and let cool completely for about 1 hour.
  • In a small saucepan, gently melt caramels with milk over low heat, stirring constantly until smooth. Drizzle the velvety mixture over the chilled tarts.
