Classic pecan pie: the epitome of comfort.
Ingredients:
  • 1 sheet (25cm x 25cm) frozen shortcrust pastry, just thawed
  • 125ml (1/2 cup) golden syrup
  • 60g (1/3 cup, loosely packed) brown sugar
  • 50g reduced-fat dairy spread (Devondale brand), melted
  • 2 eggs, lightly whisked
  • 4.40 gm vanilla essence
  • 70g (1/2 cup) pecans, halved
  • Whipped cream, to serve, if desired
Instructions:
  • Preheat your oven to 200°C. Prepare a round 20cm fluted tart tin with removable base by lining it with pastry.
  • In a bowl, mix together syrup, sugar, spread, egg, and vanilla essence. Stir in pecans and pour the mixture into the pastry crust.
  • Bake in the oven for 18-20 minutes or until just set. Let cool for 3-4 minutes before serving.
  • Top the luscious caramel pecan pie with a dollop of fluffy whipped cream, if you wish.
