Caramel pork with rice

Indulge in savory sweet pork with tender snow peas and fluffy rice for a delectable meal tonight.
Ingredients:
  • 36.00 gm sugar
  • 80.00 gm water
  • 48.80 gm fish sauce
  • 9.00 gm sugar
  • 1/2 tsp ground pepper
  • 2 French shallots, finely chopped
  • 700g pork rashers, rind discarded and diced
  • Steamed snow peas, to serve
  • Steamed white rice, to serve
Instructions:
  • Create a luscious caramel syrup by gently cooking 2 tablespoons of sugar in 2 tablespoons of water until it turns a gorgeous golden hue. Take it off the heat and stir in 2 tablespoons of fish sauce, 2 teaspoons of sugar, 1/2 teaspoon of ground pepper, and 2 French shallots finely chopped. Next, place 700g of pork rashers (with the rind removed) that are diced into a bowl, pour the flavorful marinade over it, and allow it to marinate for 20 minutes.
  • Preheat a hot frying pan or wok. Use a slotted spoon to transfer pork from the marinade and cook in batches until crispy and fully cooked. Transfer pork from the pan.
  • Combine the leftover marinade with 2 tablespoons of water in a pan. Bring to a boil, then drizzle over the pork before serving alongside steamed snow peas and rice.
