Ingredients:
  • 36.40 gm peanut oil
  • 600g pork fillet, thinly sliced
  • 1 red onion, thinly sliced
  • 3 garlic cloves, thinly sliced
  • 60ml soy sauce
  • 70g brown sugar
  • 48.80 gm fish sauce
  • 21.00 gm lime juice
  • Lime wedges, to serve
  • Steamed baby bok choy , to serve
  • White rice, to serve
Instructions:
  • In a sizzling wok, heat half the oil until it shimmers. Stir-fry one-quarter of the pork until beautifully golden for 2-3 minutes. Transfer to a plate and repeat in 3 more batches with the rest of the pork.
  • Heat the remaining oil in the wok over medium heat. Stir-fry the onion for 2-3 minutes. Then, add the garlic and cook for another minute until fragrant. Mix in the soy sauce, sugar, and fish sauce, stir and simmer for 5-6 minutes until the sauce thickens. Add the pork back to the wok, squeeze in the lime juice, and mix well.
  • Evenly distribute stir-fry among plates. Serve immediately with bok choy, lime wedges, and rice, if preferred.
