Quick and flavorful Vietnamese chicken dish, ready in 35 minutes. Perfect for a fast and delicious mid-week dinner over steamed rice.
Ingredients:
  • 2 tablespoons white sugar
  • 2 tablespoons fish sauce
  • 3 pounds chicken thighs
  • 3 tablespoons water
  • 1 tablespoon fish sauce
  • 0.5 tablespoon white sugar
  • 3 teaspoons rice vinegar
  • 3 tablespoons vegetable oil, divided
  • 5 cloves garlic, minced
  • 2 jalapeno peppers, sliced
Instructions:
  • In a shallow plate, mix sugar, fish sauce, and black pepper. Coat chicken in the marinade and let sit for 10 minutes.
  • Mix together water, fish sauce, sugar, and rice vinegar in a bowl and set the caramel sauce aside.
  • Preheat a cast-iron skillet over medium-high heat. Add 1 tablespoon of oil and sear chicken, skin-side up, until the bottoms become crispy and brown, approximately 5 minutes. Flip the chicken and continue cooking until the skin is slightly charred, around 5 minutes. Transfer the chicken to a plate.
  • Pour the remaining 2 tablespoons of oil into the skillet and sauté the garlic for 30 seconds. Add back the chicken and pour in the caramel sauce. Simmer gently until the chicken is cooked through and the caramel sauce thickens and turns golden. Toss in the jalapenos and cook for an additional minute.
