Try this delicious Vietnamese caramel beef fillet with rice in lettuce cups for a quick and tasty weeknight meal.
Ingredients:
  • 18.20 gm peanut oil
  • 600g beef Scotch fillet, trimmed, cut into 2cm pieces
  • 3 garlic cloves, crushed
  • 20.00 ml fresh ginger, finely grated
  • 1 red onion, cut into wedges
  • 110g brown sugar
  • 48.80 gm fish sauce
  • 21.00 gm lime juice
  • 1 long red chilli, seeded, finely chopped
  • 62.50 ml chopped coriander
  • Steamed jasmine rice, to serve
  • 16 butter lettuce leaves
  • Lime wedges, to serve
Instructions:
  • In a large frying pan over high heat, heat oil until shimmering. Add beef and cook for 3 mins, stirring occasionally, until browned. Add garlic, ginger, and onion. Cook for 1 min until fragrant. Transfer mixture to a bowl.
  • Pour sugar and 1/4 cup (60ml) water into the pan and stir until the sugar dissolves. Increase heat to medium and cook until the mixture thickens, about 5 mins. Stir in fish sauce and lime juice and cook for an additional 2 mins. Add the beef mixture back to the pan and cook until heated through, about 2 mins. Garnish with chili and coriander before serving.
  • Present the beef alongside fluffy steamed rice, crisp lettuce, and tangy lime wedges.
