Sauté pork in golden, spicy-sweet sauce for irresistible flavor.
Ingredients:
  • 18.40 gm vegetable oil
  • 600g pork fillet, thickly sliced
  • 1 brown onion, halved, cut into wedges
  • 20.00 ml fresh ginger matchsticks
  • 1 long fresh red chilli, thinly sliced diagonally
  • 70g (1/3 cup) caster sugar
  • 125ml (1/2 cup) chicken style liquid stock
  • 2 shallots, trimmed, cut into 5cm pieces
  • 24.40 gm fish sauce
  • 21.00 gm fresh lime juice
  • Steamed rice, to serve
  • Shallots, extra, thinly sliced, to serve
Instructions:
  • Heat oil in a hot wok until it shimmers. Cook half the pork, turning occasionally, for 5 minutes until golden. Transfer to a plate. Repeat with the rest of the pork, reheating the wok as needed.
  • In a hot wok, caramelize the onion for 2 minutes. Add in the ginger and garlic for another minute until fragrant. Mix in the chili, sugar, and water, and let it simmer for 3 minutes until the sugar melts and forms a golden sauce.
  • Combine the pork with the stock and simmer until the sauce thickens, then add the shallot, fish sauce, and lime juice. Season with pepper, serve over rice in bowls, and garnish with extra shallot.
