Enchanting fairytale dessert.
Ingredients:
  • 150g un-iced gingerbread men, crumbled
  • 32.00 gm brown sugar
  • 40g unsalted butter, melted
  • 500ml good-quality vanilla ice cream
  • Assortment of lollies, to serve
  • 80.40 gm golden syrup
  • 110g brown sugar
  • 125ml cream
  • 2.50 gm ground ginger
Instructions:
  • Preheat your oven to 180°C and prepare a baking tray by lining it with baking paper.
  • Combine crumbled gingerbread men, brown sugar, and butter in a bowl. Mix well. Spread the mixture evenly on a lined baking tray. Bake in the oven until golden brown, for 8-10 minutes. Cool completely before using.
  • In a saucepan over medium heat, blend golden syrup, brown sugar, cream, and ground ginger for the ginger and caramel sauce. Stir until the sugar dissolves, then simmer until thickened, about 5-8 minutes. Let it cool slightly after removing from heat.
  • Scoop vanilla ice cream into serving bowls or dishes, then generously drizzle with ginger caramel sauce and sprinkle with sweet crumb trail. Garnish with colorful lollies before serving.
