Elevate South African malva pudding with a zesty ginger twist and decadent caramel sauce drizzle.
Ingredients:
  • 1 tablespoon butter
  • 1 tablespoon apricot jam
  • 1 tablespoon white vinegar
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 1 cup all-purpose flour
  • 0.25 cup water
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) while you prepare a 9-inch cake pan by greasing and flouring it generously.
  • In a large bowl, whip together 1 cup of sugar, an egg, and 1 tablespoon of butter using an electric mixer until creamy. Mix in apricot jam, vinegar, ginger, and baking soda. Stir in 1 cup of milk and flour until the batter is smooth.
  • Transfer the batter into the greased pan.
  • Bake until a toothpick inserted in the center comes out clean, for around 35 minutes in the preheated oven.
  • In a saucepan over medium heat, bring 1 cup of milk, 1/2 cup of butter, 1/2 cup of sugar, and water to a boil. Stir until smooth. Pour the hot sauce over the pudding, allowing it to seep in.
