Indulge in a luxurious caramel sweet potato cheesecake with a surprising veggie twist.
Ingredients:
  • 250g digestive biscuits, coarsely broken
  • 100g unsalted butter, melted
  • 7.50 gm ground ginger
  • 650g sweet potato, peeled, chopped
  • 500g cream cheese, at room temperature, chopped
  • 140g (2/3 cup, firmly packed) brown sugar
  • 380g can Nestlé Top ‘n’ Fill Caramel
  • 3 eggs
  • Double cream, to serve
  • Chopped pecans, to serve
  • 165g (3/4 cup, firmly packed) brown sugar
  • 125g (1/2 cup) crème fraîche
  • 20g butter, chopped
Instructions:
  • Gently undo the base of a 23cm springform pan and flip it over. Place a sheet of baking paper on the base and fasten it inside the pan, letting the edges hang over.
  • Pulse the biscuits in a food processor until finely crushed. Mix in butter and 1 tsp of ginger until fully blended. Press the biscuit mixture onto the prepared pan using a glass, ensuring a 1cm border at the top. Chill in the fridge for 30 minutes.
  • Steam the sweet potato until tender, around 20 minutes. Allow it to cool slightly, then blend in a food processor until smooth and transfer to a bowl.
  • Preheat the oven to 160C/140C fan forced. Blend the cream cheese and sugar in a food processor until silky. Introduce sweet potato, caramel, and 2 tsp ginger, then blend until fully mixed. Incorporate the eggs and blend until velvety and well mixed.
  • Transfer the creamy cheesecake mixture into the pan. Bake for 50 minutes until the center gently wiggles. Turn off the oven, crack the door open, and let the cheesecake sit for 2 hours until fully cooled. Refrigerate for 4 hours to chill completely.
  • In a small saucepan over low heat, melt the sugar, crème fraîche, and butter, stirring until smooth. Increase heat and simmer for 2 minutes until thickened. Let cool slightly before using.
  • Top the cheesecake with luscious double cream and crunchy pecans, then generously drizzle with the decadent caramel sauce.
