"Gift delicious homemade Christmas caramel treats."
Ingredients:
  • 347.50 gm glucose syrup
  • 252.50 gm pure cream
  • 215.00 gm caster sugar
  • 75g butter, roughly chopped
  • 17.40 gm vanilla extract
Instructions:
  • Prepare a 7cm-deep, 20cm square cake pan by greasing it and lining the base and sides with baking paper, making sure to extend the paper 3cm from the edge of the pan on all sides.
  • In a medium saucepan over low heat, combine cream, sugar, and glucose. Stir for 5 minutes until sugar dissolves. Add butter and stir until melted. Increase heat to high and bring to a boil. Let the mixture reach 120°C to 122°C without stirring. Stir in the extract.
  • Pour the mixture into the prepared pan and allow it to cool for 30 to 40 minutes. Remove from the pan, transfer to a cutting board, cut into 48 small squares, let cool completely, then serve.
