Indulge guilt-free with this lighter, flavorful twist on classic caramel rolls - all the taste, less fat and calories.
Ingredients:
  • 3 1/2 to 4 cups Gold Medal™ all-purpose flour or Better for Bread™ flour
  • 1/3 cup granulated sugar
  • 1 teaspoon salt
  • 2 packages regular or quick active dry yeast
  • 1 cup very warm milk, (120°F to 130°F )
  • 1/3 cup stick margarine, softened
  • 2 tablespoons stick margarine, softened
  • 1/2 cup chopped pecans or raisins, if desired
  • 1/4 cup granulated sugar or packed brown sugar
  • 1 teaspoon ground cinnamon
Instructions:
  • In a large bowl, combine 2 cups of flour, 1/3 cup of granulated sugar, salt, and yeast. Add warm milk, 1/3 cup of margarine, and the egg. Use an electric mixer to beat on low speed for 1 minute, scraping the bowl often. Then beat on medium speed for 1 more minute, scraping the bowl as needed. Stir in additional flour as needed until the dough is easy to handle.
  • Transfer the dough onto a lightly floured surface and knead for about 5 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, ensuring the greased side is facing up. Cover the bowl and allow the dough to rise in a warm place for approximately 1 hour and 30 minutes, or until it doubles in size. To test readiness, lightly touch the dough; it is ready when an indentation remains.
  • Prepare pan by greasing the bottom and sides. Punch down the dough and flatten it into a 15x10 inch rectangle using your hands or a rolling pin on a lightly floured surface. Spread 2 tablespoons of margarine on the dough. Combine pecans, 1/4 cup of granulated sugar, and cinnamon, then sprinkle the mixture evenly over the margarine. Roll up the rectangle tightly, starting from the 15-inch side. Pinch the edge to seal. Shape and stretch the roll evenly, then cut it into fifteen 1-inch slices. Arrange the slices in the pan with slight spacing between them. Cover and let rise in a warm place for about 30 minutes or until doubled in size.
  • Preheat oven to 350°F.
  • Bake until beautifully golden, then transfer to a wire rack. Allow to cool for 10 minutes, then serve warm.
