Indulge in this delectable and irresistible tart.
Ingredients:
  • 150g (1 cup) plain flour
  • 55g (1/2 cup) almond meal
  • 60g (1/3 cup) icing sugar mixture
  • 125g chilled butter, chopped
  • 1 egg yolk
  • 32.00 gm brown sugar
  • 1 grapefruit, unpeeled, thinly sliced
  • Double cream, to serve
  • 40.00 ml finely grated grapefruit rind
  • 125ml (1/2 cup) fresh grapefruit juice
  • 155g (3/4 cup) caster sugar
  • 300ml thickened cream
  • 5 eggs, lightly whisked
Instructions:
  • Combine grapefruit rind, grapefruit juice, sugar, cream, and egg in a bowl. Chill in the fridge for 2 hours to enhance the flavors.
  • In a food processor, combine flour, almond meal, icing sugar, and butter until mixture resembles fine breadcrumbs. Add egg yolk and process until dough begins to come together.
  • Transfer the dough to a lightly floured surface and knead until smooth. Form into a disc, cover with plastic wrap, and refrigerate for 30 minutes to rest.
  • Roll out the pastry into a thin 3mm disc on a lightly floured surface. Carefully line a 23cm round fluted tart tin with removable base, trim any excess pastry, and chill in the fridge for 30 minutes.
  • Preheat your oven to 200°C. Line the pastry base with baking paper and fill with pastry weights or rice. Bake for 10 minutes. Remove the paper and weights, then bake for an additional 8 minutes until golden. Take it out of the oven and reduce the temperature to 160°C.
  • Pass the grapefruit mixture through a fine sieve into a pitcher, then pour it into the pastry case. Bake for 30 minutes or until just set. Allow it to cool for 30 minutes before chilling in the fridge for 1 hour.
  • Preheat the grill on high. Sprinkle half of the brown sugar over the tart and place it on a baking tray. Grill for 2-3 minutes until the sugar bubbles and caramelizes.
  • Place the grapefruit on a baking tray and generously sprinkle with the remaining brown sugar. Grill for 2-3 minutes until the sugar bubbles and forms a delicious caramelized coating.
  • Place the grapefruit slices decoratively on the tart, then cut into wedges and serve alongside a dollop of cream.
