Irresistibly fragrant and flavorful mushroom pizza that will disappear in no time.
Ingredients:
  • 250g pkt fresh pizza dough
  • 18.20 gm olive oil
  • 150g pkt Mixed Exotic Mushrooms, thickly sliced or torn
  • 1 red onion, thickly sliced
  • 1 garlic clove, crushed
  • 20.00 gm caster sugar
  • 20.00 ml red wine vinegar
  • 50g pizza cheese
  • 62.50 ml sage leaves
  • 100g gorgonzola, crumbled
  • Baby rocket leaves, to serve
Instructions:
  • Place the pizza dough on a lightly floured work surface and let it rest, covered, for 1 hour to reach room temperature.
  • Preheat your oven to 230°C. Line a large baking tray with baking paper. In a large frying pan over high heat, heat the oil. Add the mushrooms and cook for 2 mins until they turn golden brown. Transfer to a plate.
  • Lower the heat and introduce the onion and garlic to the pan. Sauté for 10 minutes or until the onion becomes tender, stirring occasionally. Then, mix in the sugar and vinegar, and continue to cook for 3 minutes until the onion achieves a slight caramelization.
  • Roll out the pizza dough into a 40cm disc and place it on the lined tray. Sprinkle with pizza cheese, then top with the mushroom and onion mixture, sage, and gorgonzola. Bake for 15 minutes or until the base is golden brown. Season, and finish by sprinkling with rocket before serving.
