Cauliflower, caramelised onion and shiitake mushrooms recipe

Umami-packed vegetarian side dish cooked with shoyu and garlic, sure to please any crowd.
Ingredients:
  • 20.00 gm butter
  • 36.40 gm olive oil
  • Sea salt and freshly ground black pepper
  • 1 small to medium cauliflower, cut into bite-sized pieces
  • 1 brown onion, sliced
  • 2 garlic cloves, finely chopped
  • 8 shiitake mushrooms, stalk ends removed, thinly sliced
  • 62.50 ml shoyu (Japanese soy sauce)
  • 6.00 gms mixed black and white sesame seeds
  • Coriander leaves, to garnish
Instructions:
  • In a frying pan over medium-high heat, melt the butter with half the olive oil and a pinch of salt. Spread the cauliflower evenly on the base of the pan and cook until dark brown (almost burnt). Flip and cook until all sides are dark brown. Set aside after cooking.
  • - Pour in the remaining oil to the pan and cook the onion for 8-10 minutes until soft, brown, and caramelized. - Add the cauliflower back to the pan along with the shiitake mushrooms, garlic, and shoyu. - Stir well and cook for an additional 3 minutes. - Season with pepper, mix thoroughly, and transfer to a serving dish.
  • Sprinkle sesame seeds and fresh coriander on top before serving to add a burst of flavor and color.
