Elevate pork chops with a decadent bourbon-caramelized onion and mushroom sauce, ditching canned soup for gourmet flavor.
Ingredients:
  • 4 (8 ounce) center-cut pork chops
  • salt and ground black pepper to taste
  • 2 tablespoons vegetable oil
  • 2 tablespoons butter
  • 2 cups thinly sliced onion
  • 1 (8 ounce) package thinly sliced baby bella mushrooms
  • 1 teaspoon white sugar
  • 0.25 cup bourbon
  • 1.5 cups beef broth
  • 0.5 cup heavy cream
Instructions:
  • Heat your oven to 375 degrees F (190 degrees C).
  • Season pork chops generously with salt and pepper. Heat oil in a hot frying pan. Sear pork chops until golden on both sides, about 3 to 4 minutes each. Transfer chops to a 9x13-inch baking dish. Discard any extra oil from the pan.
  • In the same pan, melt butter over medium heat. Add onion, mushrooms, and sugar. Saute for 1 minute, then cover and simmer on medium-low until onions are softened, about 10 minutes. Uncover, stir the mixture to incorporate caramelized bits, and cook onions for an additional 3 minutes.
  • Add the bourbon to the onion mixture and cook until most of it has evaporated, which will take about 3 to 4 minutes. Next, stir in the broth and cream and bring it to a simmer. Let it cook for 10 minutes, then pour it over the browned chops in the baking dish and cover everything with aluminum foil.
  • Roast in the preheated oven until the pork reaches 145 degrees F (63 degrees C on an instant-read thermometer), about 25 to 30 minutes.
