Healthier, flavorful pork chops with 38% less fat than traditional recipe.
Ingredients:
  • 6 boneless pork loin chops (4 oz each)
  • 1 teaspoon canola oil
  • 1/2 cup chopped onion (1 medium)
  • 1 package (8 oz) sliced fresh mushrooms (3 cups)
  • 1 can (10 3/4 oz) condensed 98% fat-free cream of mushroom soup with 45% less sodium
  • 1/4 cup water
  • 1/2 teaspoon reduced-sodium soy sauce
  • 1/4 teaspoon dried sage or thyme leaves
  • 1/8 teaspoon pepper
  • 1/2 cup fat-free sour cream
Instructions:
  • Prepare the pork chops by trimming away any visible fat. Heat a 12-inch nonstick skillet over medium-high heat. Add the pork chops and cook for about 4 minutes on each side until they are lightly browned. Once done, remove the pork chops from the skillet and set them aside.
  • In the same skillet, warm oil over medium heat then sauté onion and mushrooms for 3 minutes, stirring often.
  • Combine soup, water, soy sauce, sage, and pepper in a skillet until fully combined. Bring to a boil, then add the pork chops back in and spoon sauce over them. Reduce heat, cover, and simmer for 12 to 15 minutes, stirring and turning occasionally until pork is cooked through.
  • Blend the sour cream in until smooth, then stir constantly while heating until hot. Serve the pork chops with the mushroom mixture.
