Caramelised pear, celery and cabbage salad

Whip up this refreshing pear salad for a perfect lunch side.
Ingredients:
  • 9.20 gm extra virgin olive oil
  • 2 medium pears, quartered, cored, cut into thick wedges
  • 16.00 gm brown sugar
  • 3 celery stalks, peeled into thin ribbons
  • 350g cabbage
  • 1/2 small red onion, thinly sliced
  • 62.50 ml flaked almonds, toasted
  • 80g baby spinach
  • 62.50 ml apple cider vinegar
  • 5.90 gm wholegrain mustard
Instructions:
  • In a large frying pan over medium-high heat, heat oil. Cook pear, turning occasionally, for 5 to 6 minutes until it begins to soften. Add sugar and simmer for 3 to 4 minutes until pear is caramelized. Remove from heat and let it stand for 15 minutes to cool.
  • Prepare the apple cider dressing by combining vinegar, oil, and mustard in a screwtop jar, then season with salt and pepper. Shake vigorously until well combined.
  • In a bowl, combine celery, cabbage, onion, almonds, and spinach. Add pear and any pan juices to the salad. Drizzle with dressing and toss gently to combine. Serve.
