Indulge in a tropical pineapple and coconut liqueur treat.
Ingredients:
  • 1/2 fresh pineapple, peeled, cut crossways into 8 x 1cm slices
  • 20g butter
  • 40.00 ml Malibu coconut liqueur
  • 4 scoops lemon gelato
  • Fresh passionfruit pulp, to serve
Instructions:
  • Coat the pineapple generously with sugar. Heat butter in a non-stick pan until foamy. Cook the pineapple until golden brown on each side for about 2 minutes. Pour in the Malibu and bring to a boil. Remove from heat.
  • Arrange pineapple on individual plates. Pour the flavorful pan juices over. Add a scoop of tangy lemon gelato and a spoonful of exotic passionfruit pulp. Enjoy this delicious dessert.
