Caramelised rhubarb and custard tarts

Budget-friendly custard tarts with zesty rhubarb topping.
Ingredients:
  • 2 stems rhubarb, ends trimmed, cut into 6cm lengths
  • 50g butter
  • 70g (1/3 cup, firmly packed) brown sugar
  • 4.40 gm vanilla essence
  • 6 bought small custard tarts
Instructions:
  • Cut the rhubarb stem into 4 even pieces lengthwise.
  • In a medium saucepan over medium heat, melt the butter until bubbly. Stir in the sugar and vanilla, cooking for about 1 minute until the sugar completely dissolves.
  • Combine the rhubarb with the sugar mixture and bring to a gentle simmer. Cook for 7 minutes, stirring occasionally, until the rhubarb is tender yet firm. Allow it to cool slightly before using.
  • Uncover the tarts and garnish with the rhubarb. Drizzle the syrup on top before serving.
