Fall-inspired buttermilk pancakes topped with caramelized apples for cozy mornings.
Ingredients:
  • 2 tablespoons unsalted butter
  • 1 medium apple - peeled, cored and diced
  • 0.5 teaspoon fine sea salt
  • 1 teaspoon coconut sugar
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon apple pie spice blend
  • 1 cup sifted flour
  • 2 tablespoons white sugar
  • 0.5 teaspoon salt
  • 0.5 teaspoon baking soda
  • 1 large egg, lightly beaten
  • 2 tablespoons unsalted butter, melted
  • 0.25 teaspoon apple pie spice
Instructions:
  • Preheat a generously seasoned cast iron skillet over medium heat and melt butter. Add diced apple, sprinkle evenly with sea salt, and stir to coat. Cover with a lid for about 2 minutes until apples soften.
  • Uncover and gently mix. Lower heat slightly if apples are browning too quickly. Cover and simmer until apples are tender, for about 2 to 4 minutes. Uncover and keep cooking, stirring occasionally, until apples are evenly golden, roughly for 2 more minutes. Take off heat and blend in coconut sugar, cinnamon, and apple pie spice. Leave aside for later.
  • Start by sifting the flour into a medium mixing bowl, then add the sugar, salt, and baking soda. Mix everything together. In a separate bowl, whisk together the buttermilk, egg, and melted butter. Pour the liquid ingredients into the flour mixture and stir gently until just combined.
  • Preheat a lightly oiled griddle over medium-high heat. Pour 1/4 cup of batter onto the griddle and cook until bubbles form and edges are dry, about 3-4 minutes. Flip and cook until golden brown, about 2-3 minutes. Repeat with the rest of the batter. Serve pancakes with caramelized apples.
