Indulge in delicious high-fiber pancakes topped with caramelized apples for a nutritious breakfast.
Ingredients:
  • 250.00 ml plain flour
  • 10.00 gm baking powder
  • 100.00 gm traditional rolled oats
  • 32.00 gm brown sugar
  • 600ml buttermilk
  • 2 eggs, lightly beaten
  • 8.80 gm vanilla extract
  • 60g butter, melted, cooled
  • Extra melted butter, for cooking
  • Tamar Valley Greek Style Yoghurt, to serve
  • 50g butter
  • 4 granny smith apples, peeled, cored, cut into thick wedges
  • 90.00 gm brown sugar
  • 125.00 ml pecans
Instructions:
  • In a bowl, sift flour and baking powder, then stir in oats and sugar. Create a well in the center. In a separate jug, whisk together milk, egg, and vanilla. Pour the liquid mixture into the well. Gently mix until just combined. Let the batter rest for 30 minutes. Drizzle melted butter over the batter, then stir to combine.
  • Preheat a large non-stick frying pan over medium heat and brush with extra melted butter. Add 1/4 cup of mixture to the pan, spreading it with the back of a spoon to create a 12cm round pancake. Repeat to make a second pancake. Cook for 2 to 3 minutes until bubbles appear on the surface, then flip and cook for an additional 2 to 3 minutes until fully cooked. Transfer to a plate and loosely cover with foil to keep warm. Continue the process with the remaining mixture, brushing the pan with butter between batches.
  • To caramelize the apples: In a frying pan over medium-high heat, melt butter. Add apples and cook for 3 to 4 minutes until golden. Stir in sugar and 2 tablespoons of cold water. Cook and stir until sugar dissolves, then bring to a boil. Reduce heat and simmer for 6 to 8 minutes until slightly thickened. Finally, add pecans and mix well.
  • Serve pancakes on individual plates, and generously spoon over the delectable yoghurt and apple mixture.
