Impress guests or treat yourself with this easy and impressive breakfast or brunch dish.
Ingredients:
  • 135g rolled oats
  • 375ml orange juice
  • 1 Granny Smith apple, peeled, roughly grated
  • 120g yoghurt
  • Honey, to drizzle
  • Sweet dukkah (see related recipe), to serve
  • 1 bunch rhubarb, stems cut into 3cm lengths
  • 100g brown sugar
  • 1 cinnamon quill
Instructions:
  • Combine the oats and orange juice in a bowl, stirring well. Cover the bowl and let it soak in the fridge overnight.
  • Preheat your oven to 190°C. Mix the ingredients in a baking dish, cover with foil, and bake for 10 minutes until the rhubarb is soft but still holds its shape.
  • Combine the apple and yoghurt with the oats just before serving. Top the bircher muesli with extra yoghurt, honey, rhubarb and its juices, and sprinkle with sweet dukkah.
