Kid-friendly lunch box tartlets.
Ingredients:
  • 250.00 ml plain flour
  • 60g butter or margarine
  • 250.00 ml Bircher Muesli
  • 2 to 42.00 gm orange juice
  • 257.50 gm milk
  • 57.20 gm honey
  • 10.00 gm custard powder
  • 200g dried fruit medley or mixed dried fruit
  • 40.00 ml apricot jam (optional)
Instructions:
  • In a food processor, pulse together flour and butter until combined. Add muesli and just enough orange juice to create a soft dough.
  • Roll out the pastry on a lightly-floured surface to about 3mm thickness. Use a scone cutter to cut out circles and place them in greased patty tins. Gently prick the base of each pastry case with a fork and chill in the fridge for 15 minutes.
  • Bake in a hot oven at 200°C for 20 minutes or until golden brown. Remove from tin and let cool.
  • In a small saucepan, whisk together milk, honey, and custard powder until mixture is smooth.
  • Stir constantly while bringing to a boil until the sauce thickens, then let it simmer for 3 minutes. Remove from heat, cover with plastic wrap, and spoon the mixture into pastry cases once it has cooled.
  • Make the topping by sprinkling the tartlets with a mix of dried fruits. Warm the jam and drizzle a little over each tartlet. Store in an airtight container.
