Indulge in a savory beer-infused burger with bacon, beef, and gooey cheese for a delightful meal!
Ingredients:
  • 8 slices bacon, crisply cooked, drippings reserved
  • 2 large sweet onions, thinly sliced (about 1 1/2 lb)
  • 1 bottle (12 oz) pilsner style beer
  • 1 1/2 lb lean (at least 80%) ground beef
  • 1/4 teaspoon pepper
  • 4 slices (about 3/4 oz each) Cheddar or American cheese
  • 8 leaves red leaf lettuce or red romaine lettuce
  • 4 slices tomato
  • 4 kaiser rolls or crusty rolls, split
Instructions:
  • In a 10-inch skillet, heat up 1 tablespoon of flavorful bacon drippings over medium-high heat. Add onions and cook for about 15 minutes, stirring occasionally, until they turn soft and tender.
  • Set aside half a cup of the beer. Mix the rest of the beer with the onions. Bring to a boil, then lower the heat and simmer without a lid, stirring now and then, until the onions turn golden and the liquid reduces, approximately 30 minutes. Let it cool.
  • Chop 4 slices of cooked bacon and half of the onion mixture, then stir them together.
  • Combine chopped onion and bacon with beef in a medium bowl. Season with salt and pepper. Shape mixture into 4 large patties, creating a slight indentation in the center for even cooking.
  • In a 10-inch skillet, heat the rest of the bacon drippings over medium-high heat. Cook the patties for 8 minutes for medium-rare, 10 minutes for medium, and 12 minutes for medium-well, flipping them once. Pour in the reserved 1/2 cup of beer after turning the patties, then place cheese on top of the burgers. Cover the skillet to melt the cheese.
  • Assemble the burgers by placing them on the bottom buns, topping them with lettuce, tomato, and the rest of the caramelized onions. Cut the remaining 4 bacon slices in half. Arrange two pieces in a crisscross pattern on top of the onions on each burger, then cover with the top buns.
