Caramelized Shallot Jam

Elevate shallots into a sweet-tangy caramelized jam. Ideal with goat cheese or Brie.
Ingredients:
  • 2 tablespoons olive oil
  • 4 large shallots, thinly sliced (about 1 cup)
  • 1/2 cup packed brown sugar
  • 1/4 cup red wine vinegar
  • 6 oz chèvre (goat) cheese
  • Food Should Taste Good™ peppercorn blend brown rice crackers, as desired
Instructions:
  • In a 1-quart saucepan, heat oil over medium-high heat. Add shallots and brown sugar; cook for about 5 minutes until shallots are softened, stirring constantly. Reduce heat to medium and simmer until it turns into a jam-like consistency. Stir in vinegar and salt, then transfer to a serving bowl.
  • Garnish with creamy goat cheese and crispy crackers for a delightful pairing.
