Balsamic-glazed eschalots

Caramelized shallots add a sweet and savory touch to your holiday meal.
Ingredients:
  • 800g eschalots, peeled
  • 125ml chicken stock
  • 40g unsalted butter
  • 5.00 gm caster sugar
  • 2 tsp balsamic vinegar
Instructions:
  • In a pan, combine eschalots, chicken stock, butter, sugar, and 1 teaspoon of salt. Simmer over medium heat, covered, for 15 minutes, shaking the pan occasionally to prevent sticking. Uncover, stir in balsamic vinegar, and cook for 1 more minute until eschalots are glazed and liquid evaporates.
