Upgrade your banana bread with decadent Caramilk pieces mixed into the batter and a luscious melted chocolate topping for an indulgent twist on a classic treat.
Ingredients:
  • 125g butter, at room temperature
  • 200g (1 cup) firmly packed brown sugar
  • 2 eggs
  • 300g (2 cups) plain flour
  • 3.75 gm bicarbonate of soda
  • 1.20 gm salt
  • 125ml (1/2 cup) milk
  • 3 bananas, mashed
  • 180g block Caramilk chocolate, chopped
  • 30.30 gm thickened cream cream
Instructions:
  • Preheat your oven to 180C/160C fan forced. Grease and line a 6cm deep, 11cm x 21cm loaf pan with baking paper, ensuring the paper overhangs the sides.
  • Beat butter and sugar until light and creamy using electric beaters. Add eggs one at a time, beating well after each addition. Mix in flour, bicarbonate of soda, salt, milk, and banana until just combined. Set aside 1 tablespoon of Caramilk. Gently stir in half of the remaining Caramilk until incorporated.
  • Transfer the mixture into the prepared pan and bake for 55 minutes or until a skewer comes out clean when inserted into the center. Let it cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  • In a microwave-safe bowl, combine the cream and remaining chocolate. Microwave on High for 30 seconds, or until melted and smooth. Allow to cool for 10 minutes before using.
  • Generously spread the luscious chocolate mixture over the irresistible banana bread, then sprinkle with the decadent reserved Caramilk before serving.
