Delicious Aussie Caramilk Florentine cookies made in muffin pans for easy indulgence.
Ingredients:
  • 80g corn flakes
  • 105g (1/2 cup) glaće cherries, quartered
  • 80g (1/2 cup) macadamias, roughly chopped
  • 90g (1/2 cup) sultanas
  • 40g (1/4 cup) plain flour
  • 80g butter, chopped
  • 60ml (1/4 cup) honey
  • 50.00 gm caster sugar
  • 180g Caramilk chocolate, melted, cooled
Instructions:
  • Preheat your oven to 170C/150C fan forced. Brush 18 muffin pan cavities with melted butter and line the bottoms with small rounds of baking paper, making sure they come up 5-7mm on the sides.
  • In a large bowl, mix together the cornflakes, cherries, macadamias, and sultanas using your hands. Sprinkle the flour over the mixture and stir to combine.
  • Combine butter, honey, and sugar in a small saucepan over low heat. Stir until melted and well mixed.
  • - Coat dry ingredients evenly by pouring them over, then mix with 2 spatulas or spoons. - Divide mixture into muffin pan holes and gently press down with wet fingers. - Bake until lightly golden, about 12 minutes. - Let cool completely in pans before carefully removing with a knife and peeling off baking paper rounds.
  • Individually spoon melted chocolate onto the base of each Florentine and use the back of the spoon to spread it out evenly. Let them set with the chocolate side up before serving.
