Caraway Beef and Vegetable Soup

Hearty family-style soup made with bacon, beef, and vegetables, enriched with Progresso® beef broth for extra flavor.
Ingredients:
  • 2 slices bacon, cut into 1/2-inch pieces
  • 1/2 pound beef boneless round steak, cut into 1/2-inch pieces
  • 2 cups Progresso™ beef broth (from 32 oz carton)
  • 1 can (14 1/2 ounces) Muir Glen™ diced tomatoes, undrained
  • 2 cups water
  • 1/4 cup chili sauce
  • 1/2 teaspoon caraway seed
  • 2 cups coarsely chopped cabbage
  • 1 cup julienne strips carrots
  • 1/4 cup quick-cooking barley
Instructions:
  • Crisp up the bacon in a 3-quart saucepan over medium heat. Brown the beef by cooking and stirring for about 5 minutes.
  • Combine broth, tomatoes, water, chili sauce, and caraway seed in a pot. Bring to a boil and then simmer for 10 minutes uncovered.
  • Add the rest of the ingredients and let it simmer for 15 to 20 minutes, or until the beef and barley are tender.
